Learn About Japanese Sake

Tanba Toji Sake Brewery Museum is located in Sasayama-shi city.  Tanba Toji is known as one of Japan’s three large master brewers, along with Iwate Prefecture’s Nanbu Toji and Niigata Prefecture’s Echizen Toji.  Toji refers to craftsmen and master brewers of sake, in particular, those who excel in Japanese sake technology.  It is used in Tanba Toji’s case, to mean the master brewery centered around a brew master.

Tanba Toji was originally a farmer but during the Edo period (1603-1868), during the agricultural off-season, he went to Itami and Ikeda to prepare Kenbi and Otokoyama sake to earn money.  Tanba is now known as a master brewer of sake in Japan has made a variety of sake. At the Tanba Toji Sake Brewery Museum, a variety of brewing equipment as well as brewing processes are on exhibition.  There is also information about the history of the brew master, and the harsh environments that forced him to leave the farm to earn money making sake.
